Accessing a specific computer for on premise installed applications not accessible by internet connection is an ideal use. Even accessing a file server to access files is very easy and protects the data better than simply making the server accessible by internet connection - Splashtop simplifies the connection and security of the data as well as the user login.
Using Splashtop for applications such as email is possible but not necessary with email applications built in web access and user security.
We use it mainly in IT and production departments. Apart from the most obvious use cases for IT, Splashtop allowed us to configure user's VPN and access to the enterprise resources from their home internet connections and check everything in a real use case, without the need to configure the user's laptops in a lab environment or having to deploy tech in situ. For the production department, we use it to help operators in their daily operations with ERP and MES tools without moving to the factory and also to check the status of some standalone machines.
Pros
Easy to learn and use by techs and end users
Easy to customize and deploy
Centrally managed
Works every time
Cons
Deployment through Active Directory
Custom domain download URL
Native push installer (now manual only)

We think Splashtop may be best suited when the support team needs to use multiple instances simultaneously (not able to share single licenses). Almost all remote support and control cases fit Splashtop perfectly. The only weakness may be in very big environments where you need to deploy to 100s or 1000s of devices. Of course, you can build an MSI package and deploy it with Intune or your preferred platform, but I miss a more customizable package builder and a native push installer.

Get for remote access. Or for a short or long time working from home. easy to configure and implement. Users seem to be able to learn it quickly without a lot of training. Run well loaded and does not put a lot of processing power to run. Give us as admins easy access to see what they are doing.
We have one workstation isolated in the network and use Splashtop [Enterprsie] to access this workstation remotely. We use it for a variety of business functions by accessing applications and data on the workstation, and data on a network data server. We can control the person (machine) accessing the workstation, times of access, and can monitor who comes in when and for how long.
Pros
Access control; who, when, for how long
Remote access to applications
Isolate access to a single workstation
Compatible with security software and virus software
Ease of use from remote user perspective
Ease of use from administrative perspective
Cons
Automated reporting, remotely
