We are using it to manage all kinds of internal assets. We are currently using about 8 different apps, and with each app, we learn a little more, so each time they are more useful. Making all employees be on the same page is sometimes difficult, but when you turn a sheet into an app, using and following up on data is easy and really powerful. The same app passes through different states for each user, making it easy to keep track of everything.

We use AppSheet to capture data that falls off the grid and build new products that can be offered to customers. AppSheet is being used to capture, measure and manage data that is not currently recorded by our enterprise resource planning solution. What's even better is that the data is easily made available to our users in a very secure way and can also be visualized by other applications such as Looker. AppSheet facilitates Rapid Architected Application Development, which in turn gives the orginzation the ability to respond to changes in the environment and build new products. This is especially true in the areas of property management, logistics management and talent management.

We have primarily used AppSheet for collecting data from the field using
forms. Two of our student interns created an equipment survey form with
over 20 fields (columns) and collected data from over 4000 pieces of equipment.
AppSheet solved our business problem of creating dependent dropdown
options in forms and made collecting, processing, and managing data
easier. We have already identified 3 more use cases for AppSheets in
different on-site and data processing applications, and hope to use them
extensively going forward, perhaps with an organizational-wide audience!

AppSheet is well suited for creating survey and field inspection forms. Haven't used it much beyond it.
We are developing various rapid prototypes and variants for a planned mobile app.
Pros
I can keep my test data in Google Spreadsheets.
AppSheet does a good job creating a first "raw" skeleton of a prototype app.
If you name your data fields in a good way, AppSheet will correctly guess many of your intentions and create some basic infrastructure and artifacts that will save you time.
AppSheet has enough configuration capabilities to turn a prototype into an "alpha version" of an app that you can use for demos to colleagues etc.
Cons
AppSheet primarily assumes data are in RDBMS/SQL systems, but it should be technically possible and certainly desirable to keep data in a hybrid data store, e.g. GOOGLE FIREBASE collections, if/when these are modeled similar to RDBMS tables. (Maybe this is already possible, but it was not obvious to me.)
The views, esp. "deck" and "card" views, should offer more layout configurations.
It would help a lot if the "Data" and "UX" menu items would allow a tree-like grouping of the objects.

Suited: Rapid prototyping of hybrid mobile apps that are primarily data apps. Less suited: Apps that must be sophisticated in layouts and visuals from day 1.
